Very Tasty shortcake - Almond Mazurek
Mazurek is a Polish traditional cake and is considered one of the primary desserts of Ester across Poland.There are many kind of this cake but the nutty one tastes special. Try it and you will not be disappointed. Enjoy!
INGREDIENTS
MAZUREK BASE
- 250g flour
- 50g sugar
- 1 teaspoon vanilla extract
- 150g butter unsalted or salted as you wish
- 1 teaspoon baking powder
- 3 yolks (keep the egg whites to make the meringue)
ALMOND MERINGUE TOPPING
- 3 egg whites
- 125g sugar
- 2 cup blanched, chopped almonds or ground almonds
- 1 teaspoon vanilla extract
- 1 tablespoon corn flour
DIRECTIONS
MAZUREK BASE
- Sift flour , baking powder and sugar together into a deep mixing bowl.
- add 3 egg yolks into the flour mixture and mix all together well.
- add vanilla extract into the mixture
- add butter into the mixture
- Knead well until dough is smooth and can be formed into a compact ball. Then wrap it and put into the fridge for at least 30min.
- Preheat oven to 375 F / 190 C
- Prepare a large cookie sheet with the tablespoon of butter. Then sprinkle a flour on it, tipping from side to side to cover completely.
- on lightly floured surface, roll dough out and place on buttered cookie sheet.
bake 15min until golden.
ALMOND MERINGUE TOPPING
- beat 3 egg whites with the sugar and vanilla extract lightly
- then add corn flour and ground almonds into it
- put the mixture on the previously baked base
- put to the oven for another 10 minutes /180 C
